- 1 cup sour cream
- 1 cup chicken broth

- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 package (6 oz) stuffing mix
- 1/2 cup butter, melted
- 1 cup shredded cheddar cheese (optional)
- 1 cup frozen mixed vegetables (peas, carrots, corn) (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the cooked chicken, cream of chicken soup, sour cream, and chicken broth. Stir until well mixed. Add garlic powder, onion powder, dried thyme, salt, and black pepper, stirring to incorporate evenly. If using, fold in the frozen mixed vegetables.
- In a separate bowl, combine the stuffing mix with the melted butter, mixing until all the stuffing is coated. If desired, mix half of the shredded cheddar cheese into the stuffing mixture.
- Lightly grease a 9×13 inch baking dish. Pour the chicken mixture into the dish, spreading it evenly. Sprinkle the stuffing mixture over the top, ensuring it covers the chicken completely. If reserved, sprinkle the remaining cheddar cheese on top.
- Place the casserole in the preheated oven and bake for 30-35 minutes, or until the top is golden brown and the casserole is bubbly around the edges. Let it sit for 5-10 minutes before serving.
- Cut into squares and serve warm, pairing with a side salad or steamed vegetables. Store leftovers in an airtight container in the refrigerator for up to 3 days.
