- 4 boneless, skinless chicken breasts
- Salt and pepper, to taste
- 1 cup all-purpose flour
- 2 tablespoons olive oil
- 2 tablespoons unsalted butter
- 8 ounces cremini mushrooms, sliced
- 1 cup Madeira wine
- 1 cup chicken broth
- 1 tablespoon soy sauce
- 1 tablespoon cornstarch
- 2 tablespoons water
- 1 cup shredded mozzarella cheese
- Fresh parsley, chopped (for garnish)
Instructions
- Place the chicken breasts between two sheets of plastic wrap or parchment paper. Using a meat mallet or rolling pin, gently pound the chicken to an even thickness of about 1/2 inch.
- Season both sides of the chicken breasts generously with salt and pepper.
- Spread the flour on a large plate and dredge each chicken breast in the flour, shaking off any excess.
- In a large skillet, heat the olive oil and 1 tablespoon of butter over medium-high heat. Once the butter has melted and the oil is hot, add the floured chicken breasts to the skillet.
- Cook the chicken for about 5-7 minutes on each side, or until golden brown and cooked through. Check for doneness by cutting into the thickest part of the chicken; it should be no longer pink and the juices should run clear.
- Remove the chicken from the skillet and place it on a plate. Cover loosely with aluminum foil to keep warm.
- In the same skillet, add the remaining tablespoon of butter. Once melted, add the sliced cremini mushrooms and sauté for about 5-6 minutes, or until browned and tender.
- Pour in the Madeira wine and allow it to simmer for about 2-3 minutes, scraping the bottom of the skillet to release flavorful bits.
- Add the chicken broth and soy sauce to the skillet, stirring to combine. Let it simmer for another 5 minutes.
- In a small bowl, mix the cornstarch and water until smooth. Gradually add this mixture to the skillet, stirring constantly until the sauce thickens. Simmer for an additional 2-3 minutes.
- Preheat your oven to 375°F (190°C).
- In a large baking dish, arrange the cooked chicken breasts in a single layer. Pour the mushroom sauce over the chicken.
- Sprinkle the shredded mozzarella cheese evenly over the top.
- Bake in the preheated oven for about 15-20 minutes, or until the cheese is melted and bubbly.
- Once the cheese is melted and golden, remove the baking dish from the oven and let it sit for a few minutes.
- Garnish with freshly chopped parsley before serving.
- Serve hot alongside your favorite sides, such as creamy mashed potatoes or a fresh green salad.
