  • Salt and pepper, to taste
  • 1 cup all-purpose flour
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 8 ounces cremini mushrooms, sliced
  • 1 cup Madeira wine
  • 1 cup chicken broth
  • 1 tablespoon soy sauce
  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • 1 cup shredded mozzarella cheese
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Place the chicken breasts between two sheets of plastic wrap or parchment paper. Using a meat mallet or rolling pin, gently pound the chicken to an even thickness of about 1/2 inch.
  2. Season both sides of the chicken breasts generously with salt and pepper.
  3. Spread the flour on a large plate and dredge each chicken breast in the flour, shaking off any excess.
  4. In a large skillet, heat the olive oil and 1 tablespoon of butter over medium-high heat. Once the butter has melted and the oil is hot, add the floured chicken breasts to the skillet.
  5. Cook the chicken for about 5-7 minutes on each side, or until golden brown and cooked through. Check for doneness by cutting into the thickest part of the chicken; it should be no longer pink and the juices should run clear.
  6. Remove the chicken from the skillet and place it on a plate. Cover loosely with aluminum foil to keep warm.
  7. In the same skillet, add the remaining tablespoon of butter. Once melted, add the sliced cremini mushrooms and sauté for about 5-6 minutes, or until browned and tender.
  8. Pour in the Madeira wine and allow it to simmer for about 2-3 minutes, scraping the bottom of the skillet to release flavorful bits.
  9. Add the chicken broth and soy sauce to the skillet, stirring to combine. Let it simmer for another 5 minutes.
  10. In a small bowl, mix the cornstarch and water until smooth. Gradually add this mixture to the skillet, stirring constantly until the sauce thickens. Simmer for an additional 2-3 minutes.
  11. Preheat your oven to 375°F (190°C).
  12. In a large baking dish, arrange the cooked chicken breasts in a single layer. Pour the mushroom sauce over the chicken.
  13. Sprinkle the shredded mozzarella cheese evenly over the top.
  14. Bake in the preheated oven for about 15-20 minutes, or until the cheese is melted and bubbly.
  15. Once the cheese is melted and golden, remove the baking dish from the oven and let it sit for a few minutes.
  16. Garnish with freshly chopped parsley before serving.
  17. Serve hot alongside your favorite sides, such as creamy mashed potatoes or a fresh green salad.
