Instructions
- Place the chicken breasts between two sheets of plastic wrap or parchment paper. Using a meat mallet or rolling pin, gently pound the chicken to an even thickness of about 1/2 inch.
- In a shallow dish, combine the flour, salt, black pepper, garlic powder, onion powder, and paprika. Mix well.
- Dredge each chicken breast in the flour mixture, coating both sides thoroughly. Shake off any excess flour and set aside.
- In a large skillet, heat the olive oil and butter over medium-high heat. Once the butter is bubbling, add the coated chicken breasts.
- Cook the chicken for about 5-7 minutes on each side, or until golden brown and cooked through. Remove from skillet and cover with aluminum foil to keep warm.
- In the same skillet, add the sliced mushrooms and sauté for about 3-4 minutes until tender.
- Pour in the chicken broth and scrape the bottom of the skillet to deglaze.
- Reduce heat to medium-low and add the heavy cream, stirring to combine.
- Add the grated Parmesan cheese and dried thyme, stirring until the cheese melts and the sauce thickens, about 3-5 minutes. Adjust consistency with more chicken broth if needed.
- Return the cooked chicken to the skillet, spooning the sauce over them. Simmer for an additional 2-3 minutes.
- Serve each chicken breast on a plate, generously ladling the creamy mushroom sauce over the top.
- Garnish with freshly chopped parsley and serve with your favorite sides.
