  • 1 cup sliced mushrooms

  • 1 teaspoon dried thyme
  • 1 teaspoon paprika

Instructions

  1. Place the chicken breasts between two sheets of plastic wrap or parchment paper. Using a meat mallet or rolling pin, gently pound the chicken to an even thickness of about 1/2 inch.
  2. In a shallow dish, combine the flour, salt, black pepper, garlic powder, onion powder, and paprika. Mix well.
  3. Dredge each chicken breast in the flour mixture, coating both sides thoroughly. Shake off any excess flour and set aside.
  4. In a large skillet, heat the olive oil and butter over medium-high heat. Once the butter is bubbling, add the coated chicken breasts.
  5. Cook the chicken for about 5-7 minutes on each side, or until golden brown and cooked through. Remove from skillet and cover with aluminum foil to keep warm.
  6. In the same skillet, add the sliced mushrooms and sauté for about 3-4 minutes until tender.
  7. Pour in the chicken broth and scrape the bottom of the skillet to deglaze.
  8. Reduce heat to medium-low and add the heavy cream, stirring to combine.
  9. Add the grated Parmesan cheese and dried thyme, stirring until the cheese melts and the sauce thickens, about 3-5 minutes. Adjust consistency with more chicken broth if needed.
  10. Return the cooked chicken to the skillet, spooning the sauce over them. Simmer for an additional 2-3 minutes.
  11. Serve each chicken breast on a plate, generously ladling the creamy mushroom sauce over the top.
