  • 4 medium-sized russet potatoes
  • 1 medium onion
  • 2 cups shredded cheddar cheese
  • 1 cup milk
  • 4 large eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1/2 cup sour cream (optional)
  • Fresh parsley or chives for garnish (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Peel and dice the russet potatoes into small cubes. Soak in cold water to prevent browning.
  3. Dice the medium onion into small pieces.
  4. Shred about 2 cups of cheddar cheese if using block cheese.
  5. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the breakfast sausage and cook until browned, about 5-7 minutes.
  6. Add the chopped onions to the skillet and sauté for 3-4 minutes until translucent.
  7. Sprinkle in garlic powder, onion powder, salt, and pepper. Stir and cook for an additional minute.
  8. In a large mixing bowl, whisk together 4 large eggs and 1 cup of milk. Optionally, mix in 1/2 cup of sour cream.
  9. Drain the diced potatoes and add them to the egg and milk mixture, stirring gently.
  10. Add the cooked sausage and onion mixture to the bowl and mix until well combined.
  11. Fold in 1 1/2 cups of shredded cheddar cheese, reserving 1/2 cup for topping.
  12. Grease a 9×13-inch baking dish with cooking spray or olive oil.
  13. Pour the mixture into the prepared baking dish and spread evenly.
  14. Sprinkle the reserved 1/2 cup of shredded cheddar cheese on top.
  15. Bake in the preheated oven for 45-55 minutes until the potatoes are tender and the top is golden brown.
  16. Remove from the oven and let it sit for 10-15 minutes before serving.
  17. Optionally, sprinkle fresh parsley or chives on top before serving.
