- 1 pound breakfast sausage
- 4 medium-sized russet potatoes
- 1 medium onion
- 2 cups shredded cheddar cheese
- 1 cup milk
- 4 large eggs
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 1 tablespoon olive oil
- 1/2 cup sour cream (optional)
- Fresh parsley or chives for garnish (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- Peel and dice the russet potatoes into small cubes. Soak in cold water to prevent browning.
- Dice the medium onion into small pieces.
- Shred about 2 cups of cheddar cheese if using block cheese.
- In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the breakfast sausage and cook until browned, about 5-7 minutes.
- Add the chopped onions to the skillet and sauté for 3-4 minutes until translucent.
- Sprinkle in garlic powder, onion powder, salt, and pepper. Stir and cook for an additional minute.
- In a large mixing bowl, whisk together 4 large eggs and 1 cup of milk. Optionally, mix in 1/2 cup of sour cream.
- Drain the diced potatoes and add them to the egg and milk mixture, stirring gently.
- Add the cooked sausage and onion mixture to the bowl and mix until well combined.
- Fold in 1 1/2 cups of shredded cheddar cheese, reserving 1/2 cup for topping.
- Grease a 9×13-inch baking dish with cooking spray or olive oil.
- Pour the mixture into the prepared baking dish and spread evenly.
- Sprinkle the reserved 1/2 cup of shredded cheddar cheese on top.
- Bake in the preheated oven for 45-55 minutes until the potatoes are tender and the top is golden brown.
- Remove from the oven and let it sit for 10-15 minutes before serving.
- Optionally, sprinkle fresh parsley or chives on top before serving.
