  • 4 boneless, skinless chicken breasts
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded cheddar cheese
  • 4 large flour tortillas
  • 4 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup fresh spinach leaves
  • 1 cup diced tomatoes
  • 1/2 cup ranch dressing (optional)
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Rinse and pat dry the chicken breasts.
  3. Mix garlic powder, onion powder, paprika, salt, and pepper in a small bowl. Rub the mixture over the chicken breasts.
  4. Heat 2 tablespoons of olive oil in a large oven-safe skillet over medium-high heat. Sear the chicken for 4-5 minutes on each side until golden brown.
  5. Add minced garlic to the skillet and sauté for 1 minute.
  6. Transfer the skillet to the oven and bake for 20-25 minutes until the chicken reaches an internal temperature of 165°F (75°C). Let it rest for 5 minutes.
  7. In a medium bowl, combine shredded mozzarella and cheddar cheese.
  8. Shred the rested chicken into bite-sized pieces using two forks.
  9. Mix the shredded chicken with the cheese mixture.
  10. Lay out the tortillas and warm them if desired.
  11. Place spinach leaves and diced tomatoes on each tortilla.
  12. Spoon the chicken and cheese mixture onto the center of each tortilla.
  13. Fold the sides of the tortilla over the filling and roll it up from the bottom.
  14. Add the remaining 2 tablespoons of olive oil to the skillet and heat over medium heat.
  15. Place the wraps seam-side down in the skillet and cook for 2-3 minutes until golden brown. Flip and cook for another 2-3 minutes.
  16. Ensure the wraps are golden and crispy on both sides.
  17. Remove from the skillet, let cool for a minute, slice in half, and serve warm with ranch dressing and parsley if desired.
