- 4 boneless, skinless chicken breasts
- 1 cup shredded mozzarella cheese
- 1 cup shredded cheddar cheese
- 4 large flour tortillas
- 4 tablespoons olive oil
- 4 cloves garlic, minced
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 cup fresh spinach leaves
- 1 cup diced tomatoes
- 1/2 cup ranch dressing (optional)
- Fresh parsley for garnish (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- Rinse and pat dry the chicken breasts.
- Mix garlic powder, onion powder, paprika, salt, and pepper in a small bowl. Rub the mixture over the chicken breasts.
- Heat 2 tablespoons of olive oil in a large oven-safe skillet over medium-high heat. Sear the chicken for 4-5 minutes on each side until golden brown.
- Add minced garlic to the skillet and sauté for 1 minute.
- Transfer the skillet to the oven and bake for 20-25 minutes until the chicken reaches an internal temperature of 165°F (75°C). Let it rest for 5 minutes.
- In a medium bowl, combine shredded mozzarella and cheddar cheese.
- Shred the rested chicken into bite-sized pieces using two forks.
- Mix the shredded chicken with the cheese mixture.
- Lay out the tortillas and warm them if desired.
- Place spinach leaves and diced tomatoes on each tortilla.
- Spoon the chicken and cheese mixture onto the center of each tortilla.
- Fold the sides of the tortilla over the filling and roll it up from the bottom.
- Add the remaining 2 tablespoons of olive oil to the skillet and heat over medium heat.
- Place the wraps seam-side down in the skillet and cook for 2-3 minutes until golden brown. Flip and cook for another 2-3 minutes.
- Ensure the wraps are golden and crispy on both sides.
- Remove from the skillet, let cool for a minute, slice in half, and serve warm with ranch dressing and parsley if desired.
