- 2 large flour tortillas
- 1 cup cooked steak, thinly sliced (ribeye or sirloin works best)
- 1 cup shredded provolone cheese
- 1 cup shredded mozzarella cheese
- 1 medium onion, thinly sliced
- 1 medium green bell pepper, thinly sliced
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste

- Optional: sour cream for serving
- Optional: guacamole for serving
Instructions
- In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the sliced onions and green bell peppers. Sauté for about 5-7 minutes until soft and slightly caramelized, stirring occasionally.
- Sprinkle in 1 teaspoon of garlic powder, 1 teaspoon of onion powder, and a pinch of salt and pepper. Stir well and cook for an additional 1-2 minutes to meld the flavors.
- Add the thinly sliced cooked steak to the skillet with the sautéed vegetables. Toss together and cook for another 2-3 minutes until heated through. Remove from heat.
- Lay one tortilla flat. On one half, sprinkle a layer of provolone cheese, followed by mozzarella cheese.
- Spoon a portion of the steak and vegetable mixture over the cheese, being careful not to overfill.
- Add another layer of provolone and mozzarella cheese on top of the filling.
- Fold the tortilla in half, covering the filling, and press down gently to seal.
- Wipe out the skillet and return it to medium heat. Add a little more olive oil if desired.
- Place the folded quesadilla in the skillet and cook for about 3-4 minutes until golden brown and crispy.
- Carefully flip the quesadilla and cook for another 3-4 minutes until golden brown and the cheese is melted.
- Press down gently with a spatula to check if the cheese is melted. If it feels soft and gooey, its ready.
- Remove from the skillet and let cool for a minute before slicing into wedges.
- Prepare any desired dipping sauces like sour cream, guacamole, and hot sauce.
- Arrange the quesadilla wedges on a platter, garnish with cilantro or green onions if desired, and serve with dipping sauces.
Notes
- For a spicier kick, consider adding jalapeños to the filling.
