Ingredients

Scale
  • 4 large flour tortillas
  • 2 medium apples (preferably Granny Smith)
  • 1/2 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 1/4 cup caramel sauce (store-bought or homemade)
  • 1/4 cup chopped pecans or walnuts (optional)
  • 1/4 cup granulated sugar
  • 1/4 cup unsalted butter, melted
  • Cooking spray or additional butter for greasing the baking sheet
  • Whipped cream or vanilla ice cream for serving (optional)

Instructions

  1. Wash the apples thoroughly under running water to remove any wax or pesticides.
  2. Core the apples using an apple corer or a knife, and then slice them into thin wedges (about 1/4-inch thick).
  3. In a medium bowl, combine the sliced apples with 1/2 cup of brown sugar and 1 teaspoon of ground cinnamon. Toss well to coat and let sit for about 10 minutes.
  4. Warm the flour tortillas in the microwave for about 10-15 seconds to make them pliable.
  5. Lay each tortilla flat on a clean surface and brush one side with melted butter.
  6. Place a generous spoonful of the cinnamon-sugar apple mixture in the center of each tortilla. If using, sprinkle chopped pecans or walnuts on top.
  7. Drizzle a tablespoon of caramel sauce over the apple filling.
  8. Roll the tortilla tightly around the filling, tucking in the sides as you go.
  9. Place the rolled taquitos seam-side down on a greased baking sheet, leaving space between each.
  10. Preheat your oven to 375°F (190°C).
  11. Brush the tops of the taquitos with the remaining melted butter.
  12. Sprinkle a mixture of granulated sugar and a pinch of cinnamon over the tops.
  13. Bake for 15-20 minutes, or until golden brown and crispy.
  14. Let the taquitos cool for a few minutes on the baking sheet.
  15. Transfer to a serving platter and drizzle with more caramel sauce if desired.
  16. Serve warm with whipped cream or a scoop of vanilla ice cream.

Notes

  • Feel free to experiment with different apple varieties based on your taste preference.
  • For a healthier option, you can reduce the amount of sugar or use a sugar substitute.
  • These taquitos are best enjoyed fresh but can be stored in an airtight container for a day or two.
