- 2 cups cold beer (lager or pale ale works best)

- 1 lime, sliced into wedges
- Ice cubes
- Calamansi slices for garnish (optional)
Instructions
- Wash the calamansi fruits thoroughly under running water.
- Cut each calamansi in half and squeeze the juice into a measuring cup, ensuring to catch any seeds. Aim for about 1 cup of juice.
- Optionally, strain the juice through a fine mesh sieve for a smoother texture.
- In a small saucepan, combine 1/2 cup sugar and 1/2 cup water.
- Heat over medium, stirring until the sugar dissolves (about 3-5 minutes).
- Remove from heat and let cool to room temperature. Store any leftovers in the fridge.
- In a large pitcher, combine the calamansi juice and simple syrup, stirring well.
- Slowly add the cold beer to the pitcher, stirring gently to combine without losing carbonation.
- Add the fresh mint leaves, gently bruising them to release their oils.
- Taste and adjust sweetness with more simple syrup if desired.
- Fill tall glasses with ice cubes.
- Pour the calamansi beer mixture over the ice, filling each glass about three-quarters full.
- Garnish with lime wedges, extra mint leaves, and optional calamansi slices.
- Serve immediately and enjoy!
