  • 1 cup milk
  • 1/4 cup vegetable oil
  • 2 large eggs
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 cup cooked breakfast sausage, crumbled (or bacon, if preferred)
  • 1/2 cup diced bell peppers (any color)
  • 1/2 cup diced onions
  • 1/4 cup chopped fresh parsley (optional)
  • Cooking spray or muffin liners

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine the all-purpose flour, whole wheat flour, baking powder, salt, black pepper, garlic powder, and onion powder. Whisk until well mixed.
  3. In another bowl, whisk together the milk, vegetable oil, and eggs until fully combined.
  4. Pour the wet ingredients into the dry ingredients. Gently fold together using a spatula or wooden spoon, being careful not to overmix.
  5. Add the shredded cheese, crumbled sausage (or bacon), diced bell peppers, diced onions, and parsley (if using). Gently fold until evenly distributed.
  6. Spray muffin cups with cooking spray or line with muffin liners. Fill each cup about 2/3 full with batter.
  7. Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until golden brown and a toothpick inserted comes out clean.
  8. Remove from the oven and let cool in the tin for 5 minutes before transferring to a wire rack to cool completely.
  9. Enjoy warm or at room temperature. These muffins can be frozen for later use.
