  • 4 cups powdered sugar
  • 2 teaspoons vanilla extract
  • 12 tablespoons milk (as needed for consistency)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans, or line the bottoms with parchment paper.
  2. In a large mixing bowl, whisk together the dry ingredients: flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, whisk the eggs, then add milk, vegetable oil, and vanilla extract. Mix until well blended.
  4. Pour the wet ingredients into the dry ingredients and mix on medium speed until just combined. Do not overmix.
  5. Stir in the white vinegar, then carefully add the boiling water to the batter. The batter will be thin.
  6. Divide the batter evenly between the prepared cake pans.
  7. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean. Let the cakes cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
  8. For the frosting, beat together the softened cream cheese and butter until smooth. Gradually add powdered sugar, mixing on low speed until combined.
  9. Add vanilla extract and adjust consistency with milk if needed.
  10. Once the cakes are cool, place one layer on a serving plate and frost the top. Add the second layer and frost the top and sides of the cake.
