- 1 cup Biscoff cookies, crushed
- 1/2 cup unsalted butter, melted
- 1 cup Nutella
- 1 cup heavy cream
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1/4 cup Biscoff spread (for drizzling)
- Chocolate shavings or cocoa powder (for garnish)
- Extra Biscoff cookies (for serving)
Instructions
- Preheat your oven to 350°F (175°C).
- In a medium mixing bowl, combine the crushed Biscoff cookies with the melted butter. Mix until the crumbs are fully coated and resemble wet sand.
- Press the cookie mixture firmly into the bottom and up the sides of a 9-inch pie dish or a square baking dish.
- Bake the crust in the preheated oven for about 10 minutes. Remove from the oven and let it cool completely.
- In a large mixing bowl, add the Nutella. If desired, warm it slightly in the microwave for about 15-20 seconds for a smoother consistency.
- In another bowl, pour in the heavy cream and whip on medium speed until it starts to thicken. Gradually add the powdered sugar and continue whipping until soft peaks form (about 3-5 minutes).
- Gently fold the whipped cream into the Nutella using a spatula, being careful not to deflate the whipped cream. Add the vanilla extract and mix until just combined.
- Spoon the Nutella filling into the cooled Biscoff crust and spread it evenly.
- Drizzle warmed Biscoff spread on top, creating a swirl pattern.
- Sprinkle chocolate shavings or cocoa powder over the top for garnish.
- Cover with plastic wrap and refrigerate for at least 4 hours, or overnight.
- When ready to serve, slice the dessert into wedges or squares.
- Serve each piece with a whole Biscoff cookie on the side.
- Optionally, drizzle additional Biscoff spread on top of each slice before serving.
