Baked Chicken Bites: The Ultimate Guide to Crispy, Healthy Snacks

  • Total Time: 40 minutes
  • Yield: 4 servings 1x

Description

Tender and juicy baked chicken bites marinated in a flavorful Greek yogurt and Parmesan cheese mixture. A quick and easy appetizer, snack, or main course!

Ingredients

Scale
  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1 cup plain Greek yogurt (full-fat or low-fat)
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup breadcrumbs (panko or regular)
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon dried Italian seasoning
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional: 1/4 teaspoon cayenne pepper (for a little kick)
  • Optional: Fresh parsley, chopped, for garnish

Instructions

  1. Cut chicken breasts into 1-inch cubes. In a large bowl, combine Greek yogurt, Parmesan cheese, breadcrumbs, olive oil, minced garlic, Italian seasoning, paprika, salt, and pepper (and cayenne pepper, if using).
  2. Mix well until smooth. Add chicken cubes and toss to coat thoroughly.
  3. Cover and refrigerate for at least 30 minutes, or up to overnight for best flavor.
  4. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  5. Remove chicken from refrigerator and stir. Arrange chicken bites in a single layer on the prepared baking sheet, ensuring they are not touching.
  6. Bake for 20-25 minutes, or until chicken is cooked through and golden brown (internal temperature of 165°F/74°C). Flip halfway through baking.
  7. Let cool for a few minutes before serving. Garnish with fresh parsley, if desired. Serve immediately with your favorite dipping sauces or as part of a main course.

Notes

  • For extra crispy chicken bites, pat the chicken dry before marinating and add a tablespoon of cornstarch to the breadcrumb mixture.
  • Spice it up by adding red pepper flakes or hot sauce to the marinade.
  • Experiment with different cheeses in the marinade, such as cheddar, mozzarella, or Monterey Jack.
  • Use different herbs and spices like garlic powder, onion powder, smoked paprika, or dried oregano.
  • Make it gluten-free by using gluten-free breadcrumbs.
  • Air Fryer Option: Preheat air fryer to 375°F (190°C). Place chicken bites in a single layer in the basket. Cook for 10-12 minutes, flipping halfway through, until cooked through and golden brown.
  • Dipping Sauce Ideas: Honey Mustard, Ranch Dressing, Barbecue Sauce, Sweet Chili Sauce, Garlic Aioli.
  • Perfect for meal prepping!
  • Kid-Friendly Option: Omit cayenne pepper and use a milder Italian seasoning.
