- 1 cup plain Greek yogurt (full-fat or low-fat)
- 1/2 cup grated Parmesan cheese
- 1/4 cup breadcrumbs (panko or regular)
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 tablespoon dried Italian seasoning
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Optional: 1/4 teaspoon cayenne pepper (for a little kick)
- Optional: Fresh parsley, chopped, for garnish
Instructions
- Cut chicken breasts into 1-inch cubes. In a large bowl, combine Greek yogurt, Parmesan cheese, breadcrumbs, olive oil, minced garlic, Italian seasoning, paprika, salt, and pepper (and cayenne pepper, if using).
- Mix well until smooth. Add chicken cubes and toss to coat thoroughly.
- Cover and refrigerate for at least 30 minutes, or up to overnight for best flavor.
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Remove chicken from refrigerator and stir. Arrange chicken bites in a single layer on the prepared baking sheet, ensuring they are not touching.
- Bake for 20-25 minutes, or until chicken is cooked through and golden brown (internal temperature of 165°F/74°C). Flip halfway through baking.
- Let cool for a few minutes before serving. Garnish with fresh parsley, if desired. Serve immediately with your favorite dipping sauces or as part of a main course.

- For extra crispy chicken bites, pat the chicken dry before marinating and add a tablespoon of cornstarch to the breadcrumb mixture.
