  • 1 cup almonds (badam)
  • 4 cups milk (whole or almond milk)
  • 1/4 cup sugar (adjust to taste)
  • 1/4 teaspoon cardamom powder
  • 1/4 teaspoon saffron strands (optional)
  • 1 tablespoon rose water (optional)
  • Chopped nuts for garnish (pistachios, almonds, or cashews)

Instructions

  1. Soak the almonds in water for at least 6 hours or overnight. Drain, rinse, and peel the almonds.
  2. Blend the peeled almonds with 1/2 cup of milk until smooth. Set aside.
  3. In a large saucepan, bring the remaining milk to a gentle boil over medium heat, stirring occasionally.
  4. Once boiling, reduce heat to low and add the almond paste. Stir well. Add sugar and stir until dissolved. Then, add cardamom powder and saffron strands (if using).
  5. Allow the mixture to simmer on low heat for 10-15 minutes, stirring occasionally. For a thicker consistency, simmer longer.
  6. Remove from heat and let cool slightly. Add rose water (if using) and stir well.
  7. Serve warm or chilled. Garnish with chopped nuts before serving.
  8. Store leftovers in an airtight container in the refrigerator for up to 3 days. Stir before serving.
