- 1 cup almonds (badam)
- 4 cups milk (whole or almond milk)
- 1/4 cup sugar (adjust to taste)
- 1/4 teaspoon cardamom powder
- 1/4 teaspoon saffron strands (optional)
- 1 tablespoon rose water (optional)
- Chopped nuts for garnish (pistachios, almonds, or cashews)
Instructions
- Soak the almonds in water for at least 6 hours or overnight. Drain, rinse, and peel the almonds.
- Blend the peeled almonds with 1/2 cup of milk until smooth. Set aside.
- In a large saucepan, bring the remaining milk to a gentle boil over medium heat, stirring occasionally.
- Once boiling, reduce heat to low and add the almond paste. Stir well. Add sugar and stir until dissolved. Then, add cardamom powder and saffron strands (if using).
- Allow the mixture to simmer on low heat for 10-15 minutes, stirring occasionally. For a thicker consistency, simmer longer.
- Remove from heat and let cool slightly. Add rose water (if using) and stir well.
- Serve warm or chilled. Garnish with chopped nuts before serving.
- Store leftovers in an airtight container in the refrigerator for up to 3 days. Stir before serving.
