Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 1 cup fresh asparagus, trimmed and cut into 2-inch pieces
  • 1 cup cream cheese, softened
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 tablespoon fresh lemon juice
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a medium bowl, mix together the softened cream cheese, mozzarella, and Parmesan until well blended.
  3. Stir in the minced garlic, onion powder, garlic powder, paprika, salt, and pepper until evenly incorporated.
  4. Gently fold in the asparagus pieces, ensuring they are well coated with the cheese mixture.
  5. On a cutting board, slice a pocket into each chicken breast, being careful not to cut all the way through.
  6. Season the inside and outside of each chicken breast with salt, pepper, and a sprinkle of paprika.
  7. Generously fill each chicken pocket with the asparagus and cheese mixture, securing the opening with toothpicks.
  8. Heat olive oil in a large oven-safe skillet over medium-high heat. Sear the stuffed chicken breasts for 4-5 minutes on each side until golden brown.
  9. Drizzle fresh lemon juice over the chicken.
  10. Transfer the skillet to the oven and bake for 25-30 minutes, or until the internal temperature reaches 165°F (75°C).
  11. For a crispy top, broil for an additional 2-3 minutes, watching closely to prevent burning.
  12. Let the chicken rest for 5 minutes before removing toothpicks.
  13. Slice each stuffed chicken breast in half to reveal the filling and arrange on a serving platter.
  14. Garnish with freshly chopped parsley and serve with roasted vegetables or a fresh salad.

Notes

  • For added flavor, consider mixing in herbs like thyme or basil to the cheese mixture.
  • For a spicy kick, add crushed red pepper flakes or diced jalapeños.
  • Substitute asparagus with spinach, sun-dried tomatoes, or mushrooms if desired.
  • This recipe can be easily doubled or halved; adjust cooking time accordingly.
